The Story of Chicken Fried Steak

Was it Jimmy Don Perkins or John “White Gravy” Neutzling?

Like many a Texas icon, the history of Chicken Fried Steak is slathered in politics.

First off, you’ve got your Oklahomans who like to think they invented Chicken Fried Steak.  They made it their official state dish in 1988.

We Texans know that dipper don’t hold water.

Then you’ve got Lamesa, a little town just shy of Lubbock. They hold that the first chicken fried steak was made there 100 years ago on accident by short order cook Jimmy Don Perkins.  They even convinced the Texas Lege to pass a law naming the town the “Legendary Home of the Chicken-fried Steak” in 2011.

But hold on — folks from Bandera claim that their own John “White Gravy” Neutzling was the first to bread a steak and chicken-fry it, long before Lamesa’s Jimmy Don was a gleam in his daddy’s eye.

Here at Hyde Park Bar & Grill in Austin, we don’t have a dog in the fight. We’ve served Chicken Fried Steaks since 1982, and our is Texas-Independence good.  Come & get it!

Food Network Magazine in America’s 10 Best French Fries

Our fries garnered top honors in Food Network Magazine’s search for the 10 best French fries in the USA! Look for us in space #7 on the list. 

We’ve added this award to being listed in People Magazine’s listing of our fries in the 15 Best French Fries in America list.

Both nationally-recognized publications conducted thorough, nation-wide searches for the best French fries in America, singling out Hyde Park’s buttermilk-dipped, seasoned-flour breaded, hand cut Idaho potato fries with the signature mayo-jalapeno sauce for top honors.

We celebrated our award with 1/2 price fries on National French Fry Day, Monday, July 13, 2015!

You may have heard about Tony’s Southern Fried Chicken from Texas Monthly or Rob Balon or one of the many highly respected Austin food bloggers.  You may have heard that this chicken is THE classic Southern Fried Bone-In Chicken, so good it could make you elbow your grandma out of a church supper buffet line. So good we have to treat like a controlled substance. Offered only on Mondays and Tuesdays so we have time to put in the LOVE.

If so, you heard right.

The secrets to perfect fried chicken lie in the meat preparation, the breading, and in clean, high quality oil held at the ideal temperature throughout the vat.  It takes special attention and time.  That’s why we offer this dish only on Monday & Tuesday nights, which are typically less crowded than the weekends, at a time when we can give this chicken the care it deserves.   But be aware:  this chicken’s so good, we’ve been known do land office business on Mondays & Tuesdays, so come on in early before we run out!

People Magazine Names Our Fries In The 15 Best French Fries In America!

We are pleasantly surprised and pleased to find our fries named one of the Top 15 French Fries in America by People Magazine!   People teamed up with the Tennis Channel and some well-known French chefs, then sent out anonymous reviewers to more than 50 restaurants across the US to rate the fries on specific criteria.
