The Story of Chicken Fried Steak

Was it Jimmy Don Perkins or John “White Gravy” Neutzling?

Like many a Texas icon, the history of Chicken Fried Steak is slathered in politics.

First off, you’ve got your Oklahomans who like to think they invented Chicken Fried Steak.  They made it their official state dish in 1988.

We Texans know that dipper don’t hold water.

Then you’ve got Lamesa, a little town just shy of Lubbock. They hold that the first chicken fried steak was made there 100 years ago on accident by short order cook Jimmy Don Perkins.  They even convinced the Texas Lege to pass a law naming the town the “Legendary Home of the Chicken-fried Steak” in 2011.

But hold on — folks from Bandera claim that their own John “White Gravy” Neutzling was the first to bread a steak and chicken-fry it, long before Lamesa’s Jimmy Don was a gleam in his daddy’s eye.

Here at Hyde Park Bar & Grill in Austin, we don’t have a dog in the fight. We’ve served Chicken Fried Steaks since 1982, and our is Texas-Independence good.  Come & get it!

Cumberbatch Sweet Tater Torte

New at Hyde Park on Duval: Cumberbatch Sweet Tater Torte!

In honor of both Dr. Martin Luther King Jr and a longtime friendship, Hyde Park Bar & Grill on Duval will offer slices of Cumberbatch Sweet Tater Torte this week for $4.50 a slice.

Described by Austin American Statesman food writer Addie Broyles as “unique …The cakelike crust on the bottom and top envelop a sweet, smooth and buttery sweet potato filling,” the torte is handmade with love by Jennifer Cumberbatch. In the 1980’s, Jennifer’s husband Ashton played basketball at Enfield Park with Hyde Park Bar & Grill founder Bick Brown. The 3 cooked up the idea of Jennifer using Hyde Park’s commercial kitchen to make her tortes, which are, in her words “baked from the heart: it is memory, a tribute to those who have gone before, love emanating from the work of my hands, and an ode to family fellowship and the community table.”

After a few years of Jennifer baking the pies, and Hyde Park selling them by the slice while she sold the whole, life took another turn for the Cumberbatches and they put Jennifer’s pie business on the back burner in favor of leading a congregation.

But life has a way of coming full circle, especially when it comes to pies. So when Addie Broyles asked Bick about an article she was writing about Jennifer Cumberbatch’s return to sweet potato torte making, a phone call between Jennifer and Bick stirred their interest in having the tasty, historically-based dessert once again at Hyde Park Bar & Grill.

We serve up turkey and all the trimmings.  You come in with your family, friends, loved ones, not-so-loved ones, whomever …eat and enjoy.  No dishes to wash, no fretting over a turkey, no digging out the fancy tablecloth & china — just great food in a relaxed atmosphere.

Tips for Coming Home to Hyde Park Bar & Grill on Thanksgiving:

  • Seating is first-come, first-serve. In keeping with our 22 year tradition, reservations not required nor accepted.
  • Because we serve only Thanksgiving meals, wait times are reduced.
  • If you have a party larger than 8, we recommend:
    • Have someone from your group arrive early to get your name on the list if there is a wait. We’ll seat you when your entire group arrives.
    • Consider coming in between 3:30 and 5:30pm.
    • Consider visiting Hyde Park Westgate as it seats more people.

Hyde Park Bar & Grill South in Austin, TX is again offering a limited number of Cajun Fried Turkeys for Thanksgiving.  You’ll pick up your fried bird at our south location at 4521 WestGate on Tuesday or Wednesday before Thanksgiving.

Our turkey team has mastered the dangerous art of deep frying turkeys.  (Don’t try this at home!)  Gobblers are injected with a 5-spice Cajun seasoning before taking the plunge into our state-of-the-art frying system. It’s an incredibly flavorful turkey — a juicy moist bird with a crisp golden skin.

Your $70, pre-paid turkey order includes:

  • a 12 – 14 pound turkey, fried with signature Cajun seasoning in classic Louisiana style (feeds 5 – 8, depending on appetite)
  • oven bag packaging, ready for warming
  • warming instructions
  • pick up turkeys at Hyde Park WestGate only
